Four Generations, Eighty Years of Coffee
The coffee you're holding comes to us through Cofinet, a company whose predecessor spent more than 80 years building a reputation as one of Colombia's most respected exporters of high-quality coffee. In 2015, brothers Felipe and Carlos launched Cofinet as a new venture, and the business took a decisive turn toward growth.
In a country historically defined by washed coffees, Cofinet has become a pioneer in specialty fermentation — continually introducing process innovations that surprise roasters around the world with distinctive, characterful lots. By taking on the post-harvest work themselves, Cofinet lifted a major burden off producing farms, freeing growers to focus on cultivating fully ripe, high-quality cherries. The result: partner farmers see higher quality, higher income, and a more sustainable future in coffee.
A Passion Passed Down
Felipe and Carlos's roots run deep in Quindío's coffee country. Their father, Jairo, spent his career in farm management and served as a dry-mill manager across three generations of the family business. Their mother, Luz, inspired by Jairo's passion, devoted herself to seedling propagation, disease and pest management, and the art of harvesting perfectly ripe cherries — with a particular focus on specialty-grade quality. That devotion was passed on to Felipe and Carlos, and it remains the foundation of Cofinet today. The coffee featured here was grown with care on Luz's own farm, Mazatrán.
About the Infused Process
This lot is a fruit-infused, specialty-fermentation coffee. After pulping and removal of the mucilage, whole peaches are added to the parchment and it undergoes anaerobic fermentation for 60–72 hours. The parchment is then carefully dried on raised beds over 18–25 days.
Fermentation time varies with temperature, the ripeness of the fruit, and the activity of the microbes involved. To protect quality, pH and temperature are monitored continuously throughout fermentation — a level of care that's evident in the cup.
