Espresso Masterclass #1 — The Science of Espresso: Why Great Shots Are Physics, Not Luck

Every great espresso is the same physics playing out under your portafilter — water pushed through a bed of coffee, resistance falling, flavour dissolving on a clock. Learn to see it that way and the guesswork disappears.

Welcome to Espresso Masterclass — a 10-part series from Tasse Coffee Roastery that takes espresso apart the way our data-driven Espresso Alchemy workshop does: as a measurable, repeatable process rather than a lucky accident. Over the coming posts we’ll move from the fundamental physics of extraction all the way to pressure profiling, puck engineering and building a home practice you can actually trust.

This first post is the foundation. Before you touch a grinder setting or chase a number on a scale, it helps to understand what is really happening in those 25-or-so seconds — and why the numbers matter at all. Let’s start where the water meets the coffee.

Strip away the romance and espresso is simply a very fine coffee bed with hot water forced through it at pressure. The puck is the filter; the pump is the push. Everything you adjust — grind, dose, distribution, pressure — changes how that bed resists the water and how much flavour ends up in the cup. Once you picture the puck as a filter you can shape, dialling in stops feeling like superstition.

Pressure = Flow × Resistance

Pressure = Flow × Resistance

This is the one equation worth memorising. Pressure is what the pump provides; flow is how fast water moves through the puck; resistance is how hard the coffee bed pushes back. Change one and the others respond. A finer grind raises resistance, which slows flow at the same pressure. This simple relationship explains almost every “why did that happen?” moment at the machine — and it’s the reason chasing a single fixed number rarely works.

Watch a shot closely and it speeds up as it runs. That’s not your imagination: resistance drops during extraction as CO₂ escapes, solubles diffuse out and the bed loses mass. Fresh coffee degasses more, older coffee less — which is why the same recipe behaves differently on day 3 versus day 20 off roast. Understanding what’s physically happening inside the bed is what lets you predict a shot rather than react to it.

Flavour is a timeline. Early in extraction you pull acids and salts; later, sugars; later still, the bitter and drying compounds. Stop too early and the cup is sharp and sour; push too far and it turns hollow and bitter. Uneven beds make it worse — sour edges and a bitter core in the same shot. Learning to taste where a shot sits on that timeline is the single most useful sensory skill an espresso maker can build.

Making it objective: TDS, EY & TCF

Taste tells you what; numbers tell you how much. TDS (Total Dissolved Solids) measures strength — how concentrated the cup is. EY (Extraction Yield) measures efficiency — what fraction of the coffee actually made it into the liquid. TCF (Time to Cover Filter) times your pre-infusion. A refractometer turns a vague ‘a bit weak’ into a repeatable target you can hit again tomorrow. Numbers don’t replace your palate; they anchor it.

Numbers only go so far — in the end espresso is judged in the mouth. We use a seven-point sensory framework: Sharp, Rich, Syrup/Mouthfeel, Sweet, Sour, Bitter and Aftertaste. Scoring each one separately forces you to slow down and describe a shot precisely instead of reaching for ‘good’ or ‘bad’. It also gives you a shared language — essential when a whole bar needs to pull the same espresso.

The internet is full of espresso rules stated as gospel — 25 seconds, 9 bars, a 1:2 ratio. Some are useful starting points; none are laws. The mindset that separates a good barista from a great one is treating every rule as a hypothesis to test: change one variable, log it, taste it, keep what works. That habit — curiosity backed by measurement — is the thread running through this entire series and the workshop behind it.
