Espresso Masterclass #7 — Pre-infusion & TCF: Timing the Start of the Shot

A great shot is not won at 9 bars. It is won in the quiet five to fifteen seconds before full pressure ever arrives.
Welcome back to the Espresso Masterclass series. In Post 4 we saw how the grinder builds the puck's raw material, and in Posts 5 and 6 we engineered the bed itself with WDT, low-pressure tamping and staccato layering. Now the water finally arrives — and the way it arrives matters enormously. This post is about pre-infusion: the low-pressure wetting phase that decides whether your carefully prepared puck survives contact with the pump, and about TCF — Time to Cover Filter — the simple visual metric that turns pre-infusion from a vague "a few seconds" into a number you can measure, repeat and optimise.

Chapter 1
Why the First Seconds Decide the Shot
A dry, compacted espresso puck is a hostile environment for water. Compressed coffee actively resists wetting, and water under pressure always seeks the path of least resistance. If you slam 9 bars into a dry bed, whichever region wets first instantly becomes the highway — pressure carves it wider, and a channel is born before extraction has even begun. Everything you built in puck prep can be destroyed in under two seconds. Pre-infusion exists to prevent exactly this: it lets the whole bed wet, swell and seal itself before it ever has to withstand full brewing force.
What you'll take away

Behind the shot: In Espresso Alchemy we pull deliberately "abused" shots — full pressure onto a dry puck — side by side with gently pre-infused ones, and compare the flow behaviour and cup. The difference needs no refractometer to taste, but we measure it anyway.
Chapter 2
Saturation, Swelling & the CO₂ Problem
Three things happen during a good pre-infusion. First, water penetrates the bed evenly, filling the voids between particles. Second, the particles absorb water and swell, closing microscopic gaps and turning the puck into a more homogeneous, mechanically stable filter. Third, trapped carbon dioxide — a by-product of roasting — escapes gently rather than erupting under pressure and cracking the bed. This is espresso's version of the pour-over bloom, and it explains why fresh, gassy coffee benefits from longer, gentler pre-infusion than well-rested coffee.

Chapter 3
Pressure & Flow: What "Low and Slow" Actually Means
Pre-infusion typically runs at 1–4 bar — enough to move water into the bed, not enough to erode it. But machines get there very differently: E61 groups use a spring-loaded pre-infusion chamber, mains-plumbed machines can soak at line pressure, levers wet the puck under spring or manual control, and modern flow-control and pressure-profiling machines let you set the wetting phase explicitly. What matters is not the mechanism but the outcome: a controlled, gentle delivery of water until the bed is fully saturated. Know what your machine actually does in the first ten seconds — many baristas have never checked.
What you'll take away
- Effective pre-infusion lives in the 1–4 bar range — wetting pressure, not brewing pressure.
- E61, lever, plumbed-in and profiling machines all pre-infuse differently; learn your machine's true behaviour.
- The goal is outcome-based: full saturation before ramp-up, however your hardware achieves it.
Behind the shot: Participants map their own machine's pressure curve in the first 15 seconds of a shot. Almost everyone is surprised by what their "pre-infusion switch" really does — or doesn't do.
Chapter 4
TCF — The Metric Hiding Under Your Basket
Time to Cover Filter is exactly what it sounds like: start the shot, watch the underside of a bottomless portafilter, and time how long it takes for espresso to cover the entire basket face in a uniform dark sheen. That's it — no instruments beyond a naked portafilter and a timer. Yet TCF is a direct window into puck resistance: a long TCF means water is struggling through a dense, fine or compacted bed; a short TCF means an open, fast bed. Where a pressure gauge tells you what the machine is doing, TCF tells you what the puck is doing.
What you'll take away
- TCF = seconds from pump-on until espresso fully covers the bottom of the basket.
- It is a free, repeatable proxy for puck resistance — the variable your recipe never captures.
- Uneven coverage (one side wets first) is an early-warning sign of distribution problems.
Behind the shot: We film the basket underside in slow motion during the masterclass. Watching where the first drops appear — centre, rim, or one stubborn corner — tells you more about your prep routine than any recipe sheet.
Chapter 5
Timing with TCF — Ending Pre-infusion on Evidence
Once you can measure TCF, you can use it as a trigger instead of guessing a fixed pre-infusion time. The logic is simple: when espresso covers the filter, the bed is saturated top to bottom — the job of pre-infusion is essentially done. Practitioners who have tested this systematically, such as espresso data writer Robert McKeon Aloe, found that scaling pre-infusion to TCF (his experiments favoured pre-infusion lengths of roughly three times TCF) outperformed any fixed number of seconds, because it automatically adapts to each puck's actual resistance. The exact multiplier matters less than the principle: let the puck, not the clock, end your pre-infusion.

- A common data-driven starting point: pre-infuse for a multiple of TCF (≈3×), then ramp to full pressure.
- Trend your TCF across shots — drift signals a change in grind, dose, prep or bean age.

Chapter 6
Dialling Pre-infusion by Roast, Age & Basket
Pre-infusion is not one setting — it is a response to the coffee in the basket. Light roasts are denser, less soluble and less porous: they usually reward longer, gentler pre-infusion that helps water penetrate and supports higher extractions without channelling. Dark roasts are brittle and porous, wet quickly, and over-extract easily — shorter wetting phases keep them sweet. Fresh coffee, loaded with CO₂, pushes back against incoming water and stretches TCF; rested coffee lets water in easily. And remember that pre-infusion is not free: excessively long soaks at near-zero flow can begin extracting prematurely and unevenly. More is not automatically better — matched is better.

- Light roasts: longer, gentler pre-infusion supports even, higher extractions.
- Dark roasts and well-degassed coffee: shorten the wetting phase to avoid harshness.
- Pre-infusion has a cost — over-long soaks extract prematurely; match the phase to the coffee.

Chapter 7
Making It a Practice — Pre-infusion in Your Shot Log
Everything in this post reduces to a workflow you can run tomorrow morning: pull your shot on a bottomless portafilter, record TCF, note your pre-infusion length and pressure, then log the usual outputs — shot time, beverage weight, and TDS if you have a refractometer. Change one variable at a time. Within a week you will know your coffee's normal TCF band, and any shot that falls outside it will explain itself before you even taste it. Pre-infusion stops being folklore and becomes the first measured phase of a fully instrumented shot — which is precisely where the next post picks up.
