The coffee featured here was grown with care on \u003cstrong\u003eLuz's own farm, Mazatrán\u003c\/strong\u003e.\u003c\/p\u003e\n\u003ch3\u003eAbout the Infused Process\u003c\/h3\u003e\n\u003cp\u003eThis lot is a fruit-infused, specialty-fermentation coffee. After pulping and removal of the mucilage, whole peaches are added to the parchment and it undergoes \u003cstrong\u003eanaerobic fermentation for 60–72 hours\u003c\/strong\u003e. The parchment is then carefully dried on raised beds over \u003cstrong\u003e18–25 days\u003c\/strong\u003e.\u003c\/p\u003e\n\u003cp\u003eFermentation time varies with temperature, the ripeness of the fruit, and the activity of the microbes involved.
