The Man Who Brought Carbonic Maceration to Coffee

Jamison Savage bought land in Volcán in 2005 and founded Finca Deborah in 2008, growing nothing but Geisha. Taking his cues from winemaking, he became the first producer to introduce carbonic maceration to coffee commercially — a method now used across the world. The Savage team today spans four farms: Deborah, Iris, Morgan and Don Eduardo.

FUNDAMENTALS — Technique Returned to the Community

Savage has since opened a partnership programme with skilled growers around Volcán and Boquete, supporting ecosystem management and cultivation technique while contributing the processing expertise the team is known for. That programme is the FUNDAMENTALS line, and Iridescence is its carbonic-maceration washed Geisha. Whole cherry is sealed and fermented under CO₂ before the coffee is pulped, washed and sun-dried.
